Thursday Recipe: Creamy Golden Soup

My kids love to help make this soup because it is so easy and quick. We always have these items in the fridge so it makes an easy lunch option too.


CREAMY GOLDEN SOUP

Ingredients:

1 cup water
3 cups potatoes, cubed
½ cup carrot, sliced
½ cup celery, sliced
¼ cup onion, chopped
1 tsp parsley flakes
½ tsp salt
dash of pepper
2 Tbsp flour
1 ½ cup milk
8 oz Velveeta, cubed

Combine water, potatoes, celery, carrots, onion, parsley, salt and pepper in a large pot. Bring to a boil then reduce heat and simmer covered for about 15 minutes or until veggies are tender.

Gradually add milk to flour (use a salad dressing shaker if possible) mixing until blended.

Gradually add milk mixture to hot veggies, stirring constantly until mixture boils and thickens.

Add Velveeta and stir until melted.

Easy Cheesy Biscuits are a perfect side dish for this soup!
EASY CHEESY BISCUITS
Ingredients:
2 cups baking mix
2/3 cup milk
1/2 cup shredded cheddar cheese
1/2 cup butter, melted
1/2 tsp garlic powder

Preheat oven to 450 degrees.

Mix all ingredients together until a soft dough forms.

Drop by spoonfuls onto an ungreased baking sheet.

Bake for 8 - 10 minutes, until golden brown.
