Tuesday Recipe: Oven Fried Pork Chops

I don't often cook pork because I find it less versatile than most other meats. However, this recipe is quick, easy, inexpensive and tasty. The breading makes a crispy coating that makes a nice contrast to the pork.

OVEN FRIED PORK CHOPS

Ingredients:
3 Tbsp butter or margarine
1 egg, beaten
2 Tbsp milk
1 cup cornbread stuffing mix
4 pork chops

Preheat oven to 425 degrees.

Melt butter in a baking dish by placing it in the preheating oven.

Stir together egg and milk.

Crush cornbread stuffing mix into smaller crumbs and place them on a plate.

Dip pork chops into egg mixture then coat with stuffing mix. Place pork chops in the prepared pan.

Bake for about 20 minutes, then turn them over and bake for another 10 – 15 minutes (until pork is no longer pink). The cooking time will vary depending on the thickness of the pork chops.

A great side dish for this recipe is:

SEASONED GREEN BEANS

Ingredients:
2 cans green beans (choose any cut you like), drained
1 Tbsp butter or margarine
1/8 cup diced onion
1 small can mushrooms
2 Tbsp flour
1 cup chicken broth
1 cup heavy cream
½ cup potato chips,
salt and pepper

In a large skillet, melt butter over medium heat. Sauté onions and mushroom until golden brown.

Mix in the flour, then gradually stir in the chicken broth and cream. Allow this mixture to cook over medium heat until thickened (remember to stir frequently).

Stir in green beans and cook until warmed through. Season with salt and pepper. Sprinkle crushed potato chips on top.
