POTATO CRUSTED SALMON
Ingredients:
1/2 cup potato chips, crushed finely
1/4 cup panko bread crumbs (Japanese-style)
4 salmon fillets (approx. 6 oz each)
1 tsp olive oil
1 Tbsp Dijon mustard
salt and pepper

Set oven to 'high' broil. Line rimmed baking sheet with aluminum foil.
In a small bowl, combine potato chips and bread crumbs.
Rub olive oil onto salmon fillets. Place on foil-covered baking sheet. Sprinkle with salt and pepper.
Broil for 9 - 10 minutes. Remove from oven and check fish for doneness. If needed, place back in to broil for longer; be sure to check doneness about every 1 - 2 minutes.
Carefully spread the Dijon mustard over the fish fillets and press chip/crumb mixture on top.
Place back in to broil until crust is golden brown; about 1 minute.

SWEET MASHED POTATOES
Ingredients:
2 lbs potatoes, peeled
1 large sweet potato, peeled
2/3 cup heavy cream (or about ½ cup milk)
salt and pepper to taste

Cut the white potatoes into about four pieces each. Slice the sweet potato in half then slice each half into small pieces.
Cook sweet potato in boiling water for 10 minutes then add the white potatoes into the same boiling water. Cook until all is fork tender and drain.
Mash the potatoes with the milk, salt and pepper.
