CHEESY CATFISH
Ingredients:
1 egg
1 Tbsp milk
¾ cup grated parmesan cheese
1 ¼ cup flour
1 ½ tsp salt
1 ½ tsp pepper
1 tsp paprika
8 small catfish fillets
¼ cup margarine, melted

Preheat oven to 350 degrees. Spray 9 x 13 baking dish with cooking spray.
In a small bowl, beat egg and milk.
In another bowl, mix cheese, flour, salt, pepper and paprika.
Dip catfish in egg mixture, then dredge in cheese mixture. Arrange fish in single layer in baking dish. Pour melted butter over fish.
Bake 15 minutes, until golden brown and cooked through.
PRINTABLE VERSION
Serve with green salad.
