TACO WRAPS
Ingredients:
1 lb ground beef
1 package taco seasoning
½ cup water
1 can refried beans
6 flour tortillas
½ cup sour cream
½ cup salsa
1 cup cheddar cheese, shredded
1 small tomato, diced

Brown the ground beef in a large skillet; breaking the ground beef up well. Drain.
Add the water and taco seasoning to the ground beef. Bring to a boil then simmer for 5 minutes. Remove from the heat and stir in the refried beans until well blended.
Heat the tortillas in the microwave by wrapping the whole pile in wet paper towel. Microwave for 20 – 30 seconds (the tortillas should be warm and easy to fold).
Evenly distribute the meat mixture over the tortillas. Then evenly top each with the salsa, sour cream, cheese and tomatoes.
Roll the tortilla as tightly as possible, wrap in plastic wrap and refrigerate for at least an hour.
Cut in half or thirds for serving. (optional: These are great dipped in guacamole or a mix of sour cream and salsa).
PRINTABLE VERSION
This goes well with:
CORN AND BLACK BEANS
Ingredients:
1 can black beans (16 oz), drained well
1 can corn (15 oz), drained
½ cup chunky salsa
2 tsp ground cumin
1 Tbsp olive oil
Salt & pepper to taste

In medium saucepan, mix all ingredients.
Cook over medium heat until just warmed through. (can also be served cold)
