Thursday Recipe: Cheeseburger Pie

CHEESEBURGER PIE

Ingredients:
1 unbaked pastry shell (about 9 inch), pricked with a fork.
8 American cheese slices, cut in half
1 lb ground beef
½ cup tomato sauce
1/3 cup onion, chopped
1 beef bouillon cube
3 eggs, well beaten
2 Tbsp flour
chopped tomato and shredded lettuce

Preheat oven to 425 º. Bake shell for 8 minutes; remove from oven. Reduce temperature to 350. Brown ground beef and drain. Add tomato sauce, onion and bouillon. Cook and stir until bouillon dissolves. Remove from heat. Stir in eggs flour, and six of the cheese slices (12 halves). Put mixture in baked pie shell. Bake 20 – 25 minutes, until warmed through. Arrange remaining cheese slices on top and return to the oven for 3 – 5 minutes, until cheese melts. Garnish the top with lettuce and tomato. Cut into pie slices to serve.

GARLIC MASHED POTATOES
 
Ingredients:
6 medium-sized potatoes
1 garlic clove, minced
6 Tbsp. butter or margarine
1 cup heavy cream (can substitute 1/2 - 1 cup of milk)
1 tsp dried parsley flakes
1 tsp dried tarragon
salt and pepper to taste

Peel and cube potatoes. Put in large pan with enough water to cover potatoes. Boil then reduce heat, cover and let boil for about 20 - 30 minutes (check often for doneness).


Drain water then put potatoes in a large bowl.


In a small pan, melt butter then sauté garlic in it.


Add garlic mixture and other remaining ingredients to the potatoes and mash until desired consistency.
