Thursday Recipe: Country Fried Steak

COUNTRY FRIED STEAK

Ingredients:
1 ½ lb round steak
¼ cup plus 3 Tbsp flour
3 Tbsp vegetable oil
1 large onion, chopped
1 ½ cups milk
salt and pepper

Cut steak into 4 – 6 pieces. Pound flour into steaks then sprinkle with salt and pepper.


Heat vegetable oil in large skillet over medium-high heat. Cook steaks quickly (about 3 - 5 minutes per side) until golden brown and cooked through. Remove and keep warm in foil.


Drain all but about 2 Tbsp of drippings from the skillet. Add onion and sauté for about 7 - 8 minutes or until soft.


Stir in remaining flour with onion, and cook 2 – 3 minutes. Slowly add milk, constantly stirring until gravy is thickened.


Serve gravy over the steaks.

This goes great with:

GARLIC MASHED POTATOES

Ingredients:
6 medium-sized potatoes
1 garlic clove, minced
6 Tbsp. butter or margarine
1 cup heavy cream (can substitute 1/2 - 1 cup of milk)
1 tsp dried parsley flakes
1 tsp dried tarragon
salt and pepper to taste

Peel and cube potatoes. Put in large pan with enough water to cover potatoes. Boil then reduce heat, cover and let boil for about 20 - 30 minutes (check often for doneness).


Drain water then put potatoes in a large bowl.


In a small pan, melt butter then sauté garlic in it.


Add garlic mixture and other remaining ingredients to the potatoes and mash until desired consistency.
