Tuesday Recipe: Oven Fried Pork Chops

OVEN FRIED PORK CHOPS

Ingredients:
3 Tbsp butter or margarine
1 egg, beaten
2 Tbsp milk
1 cup cornbread stuffing mix
4 pork chops

Preheat oven to 425 degrees.


Melt butter in a baking dish by placing it in the preheating oven.


Stir together egg and milk.


Crush cornbread stuffing mix into smaller crumbs and place them on a plate.


Dip pork chops into egg mixture then coat with stuffing mix. Place pork chops in the prepared pan.


Bake for about 20 minutes, then turn them over and bake for another 10 – 15 minutes (until pork is no longer pink).

CHEESY BROCCOLI COUSCOUS

Ingredients:
2 cups water
10 oz package of uncooked couscous
10 oz package frozen broccoli with cheese sauce
1 ½ cups low fat cottage cheese
½ cup grated parmesan cheese

Bring water to a boil in medium saucepan and stir in couscous. Remove from heat, cover and wait about 5 minutes.


Cook frozen broccoli with cheese sauce according to the directions on the package.


Mix broccoli and cheese sauce with cooked couscous, cottage cheese and parmesan cheese. Season with salt and pepper, if desired.
