Wednesday Recipe: Manicotti

MANICOTTI

Ingredients:
8 manicotti noodles, cooked per package directions
2 cups ricotta cheese (or 1 cup ricotta and 1 cup cottage cheese)
1 egg, beaten
2 Tbsp minced parsley
4 Tbsp parmesan cheese
1 tsp basil
¼ tsp nutmeg
½ tsp each salt and pepper
1 can of spaghetti sauce

Preheat oven to 375 degrees.


Combine the cheese, egg, parsley, parmesan cheese, basil, nutmeg, salt and pepper in a small mixing bowl. Divide mixture and stuff equal amount into each manicotti noodle.


Put about ¼ of the sauce at the bottom of a 9 x 9 baking pan. Make a single layer of the stuffed manicotti noodles. Cover with remaining sauce.


Cover pan with foil and cook for one hour.

This goes great with:

CRISPY OVEN FRIES

Ingredients:
3 medium potatoes
1/2 tsp paprika
1/4 cup olive oil
salt and pepper to taste

Preheat oven to 425ยบ.


Microwave potatoes for about 5 minutes.


Let cool slightly then cut potatoes into wedges.


Drizzle potatoes with oil, sprinkle with paprika, salt and pepper.


Bake until crispy and browned (about 30 - 40 minutes).
